Paris Inspired Dinner Idea: Salad Niçoise

This lovely and luscious salad originated in the French city of Nice. It is traditionally made of tomatoes, hard-boiled eggs, Niçoise olives and anchovies or tuna, dressed with olive oil. There are many different variations of this salad, though and if you order it in Paris, France restaurants you will get something a bit different every time.

My favourite combo for this salad is lettuce, of course, hard boiled eggs, olives, smoked salmon, blanched green beans or asparagus, mini roasted potatoes, carrot shavings and pickled beats. I also add in some artichoke hearts and roasted red peppers because I love them. Then, I drizzle the whole plate with a homemade dressing of olive oil, balsamic vinegar, stoned mustard, honey, salt and pepper and it makes a delectable salad, worthy of being a full main course.


Recipe: Salad Niçoise (makes 2 servings)


Ingredients:

  • Green Leaf or Romaine Lettuce

  • 4 Hard boiled eggs

  • Handful of kalamata or green olives

  • Smoked salmon

  • Handful of grape tomatoes but into halves

  • 1 cup of Blanched green beans or asparagus

  • 4 Mini roasted potatoes

  • 2 Carrots (peel skin and keep remaining shavings)

  • 2-3 Pickled beats (optional)

  • 2-3 Artichoke hearts (optional)

  • 4-5 Roasted red peppers strips (optional)

  • 1/4 of an English cucumber (optional)

  • Half an avocado (optional)

Instructions:


Combine ingredients on two plates in neatly organized sections drizzle with olive oil. Serve and Enjoy!
