Roasted Butternut Squash, Sweet Potatoes, Carrots and Onions

This recipe is a great fall time dish to whip up for a family dinner, potluck wth friends or a lunch time meal. It's full of beautiful oranges and yellows and warm spices, not to mention super delicious. Here's the recipe:




Ingredients:
1/2 butternut squash cut into cubes
2 sweet potatoes cut into cubes
1 yellow onion diced
6 medium sized carrots diced
1 tsp. of Thyme
1 tsp. of oregano
1 tsp. of garlic powder
1 tsp. of sage
1 tsp. of dried rosemary
3 tbsp. of olive oil
Salt and pepper to taste
Directions:
Pre heat your oven to 375˚F.
After cutting up the butternut squash, sweet potatoes, onion and carrots place them on a large baking sheet lined with parchment paper and sprinkle with olive oil and all the spices. Toss ingredients lightly with your hands. Put in the oven and roast for 40 - 50 minutes or until desired tenderness. Allow to cool. Place in a serving dish and viola! Fall goodness for your fam.
