Quick, Easy and Healthy Lunch Ideas: Orange Cranberry Chicken Salad
This salad recipe is super fresh, full of goodness and a little sweet to tantalize your tastebuds. My mom makes a variation of this salad on special occasions and it is one of my favourites.
The orange, cranberry salad is a tasty treat salad that is worthy of a full meal when you add some grilled chicken. For the kids, break it up into its pieces -- tangerines, dried cranberries, chicken and roasted almonds. Yummy!

Ingredients:
2-3 boneless, skinless chicken breasts
1-2 tbsps of olive oil
2 cups of spinach
3-5 cups of lettuce
1/4 of a red onion
1 can of mandarin segments
2-4 tbsps of dried cranberries
2-4 tbsps of slivered almonds
1 tbsp cinnamon
1 tbsp brown sugar
1 tbsp butter
salt and pepper to taste
Directions:
Cut chicken breast into smaller, thin strips. In a large sauce pan on medium/high heat . Add the olive oil and chicken breasts. Add sat and pepper. Grill for 15-20 mins or until chicken is cooked throughly. Turn off heat, put chicken aside.
Roast the almonds in a medium sauce pan on medium heat. Add butter once melted, add in almonds, brown sugar and cinnamon. Stir continuously until almonds are thoroughly coated and sugar has completely dissolved into sticky texture. Turn off heat and allow almonds to cool.
Combine spinach and lettuce in a bowl. Drain mandarins and place mandarin segments on top of greens. Add dried cranberries and roasted almonds. Add grilled chicken. Top with onions, dress with a light vinaigrette and serve.
