Quick and Easy Lunch Idea: Macaroni and Tuna Salad
If you’re racking your brain with what to make for lunch for you and your family and want to eat something healthier than mac and cheese. I'm not knocking mac and cheese. It's a delicious family meal and household staple. But not ideal on the daily. So, on days when you feel you need something different, a bit healthier and just as filling may I recommend this wonderfully quick and easy Macaroni and Tuna salad. It's super yummy and a hit with the kids!

Recipe
Ingredients:
1 can of tuna of your choice
2 cups of spinach
1/4 of a white onion, finely chopped
2 finely chopped carrots
2 finely chopped stalks of celery
2 tbsps of mayonnaise or plain greek yogurt
2-4 pickles, finely chopped
1 package of gluten free brown rice macaroni
salt and pepper to taste
Directions:
Cook gluten free pasta according to direction on the package, set aside to cool or run under cool water to speed along cooling process.
Combine pasta, canned tuna forked up so it flakes nicely, chopped up onion, celery, carrots and pickles to a large bowl. Add in mayonnaise or greek yogurt and stir ingredients together until well mixed, add in spinach, then salt and pepper to taste. Cool in the fridge or serve right away. Enjoy!
